F&B Assistant Manager

Oliveto (morning/lunch)

Responsibility

You will be in charge of the organisation, execution and continual growth of our breakfast service and the running of our new midweek lunch service. You will be expected to initiate continuous improvements across every aspect of the guest breakfast and lunch experience – table setting, menu offering, service style and ambience. Our breakfast service includes morning elevenses in Oliveto and our lobby.

Key Tasks

  • To assume responsibility for the breakfast and lunch service teams and all aspects of the front of house operations from morning to afternoon

  • To work closely and collaboratively with the back of house operations team ensuring a unified approach from kitchen through to floor

  • To ensure all bookings are managed according to company SOPs, guest profile checked in advance of arrival and all guests are greeted with a warm welcome (hotel or external guest)

  • To deepen guest loyalty through accurate use of ResDiary for personal preference, habits, dislikes, so each new service surpasses the previous experience

  • To forge a very strong working relationship with the rooms team and kitchen team, which is essential to the successful operation of the breakfast and mid-morning service

  • To assume senior server responsibility at all other times and ensure all wait staff carry out their work in a professional, efficient and friendly manner

  • To manage the order station – ensure all customer orders on the EPOS system are entered correctly by your team

  • To ensure all guest spaces are always kept clean and staff are always in motion (never idle)

  • To check each server station is stocked and kept clean ahead of each service

  • To ensure the host station is well organised, all menus are clean and table plans are neatly prepared ahead of each service

  • To ensure a friendly response to incoming phone bookings and deal with all online bookings in a timely manner, sticking to comms protocols at all times

  • To ensure all staff wear the uniform correctly and in line with company standards, as set out in the staff welcome guide

  • To move seamlessly from morning breakfast to morning elevenses

  • To work on project specific tasks, when allocated

Job Requirements

  • Located in Oliveto restaurant, Haddington House in Dún Laoghaire

  • Scheduled week is Monday–Friday, 6:45am-3pm

  • Six month probation period

  • Managerial dress style co-ordinated by HH
